Chicken with Fermented Soy

Ingredients:
3 - chicken drumsticks (preferably chopped into 5 pieces per drumstick)
3 - tbsp oil
2 - cloves of garlic chopped
2 - tbsp fermented soy (tau cheong)
3 - cm of ginger chopped
1 - carrot cut into cubes
1 - onion cut into half
300 ml of water

Method:
  1. Mix well the chopped garlic, ginger and fermented soy. Set aside for 10 minutes.
  2. Heat up the wok. Pour in the oil and heat it up.
  3. Pour the mixed fermented soy in step 1 into the wok and stir fry it until fragrant. Add in the carrot and onion too.
  4. Add in the chicken and fry together well. Sprinkle some water to avoid wok stick and keep frying until the chicken, carrot and onion are mixing well with the fermented soy.
  5. Turn off the fire. Transfer all to a pot and turn on the fire to hit up the pot.
  6. Pour the water into the pot and mix well the chicken with water.
  7. Slow down the fire and stew the chicken for 15 minutes. Add in water and stir well if it evaporates.
  8. Turn off the fire once the chicken is cooked. (You can heat it up again whenever needed
Serves: 3-4 person Cooking Time: 30 minutes
