Pan Frying Salmon

Ingredients:
1 piece of salmon around 100 gram sliced to 2cm thick
2 tbsp - olive oil
2 tbsp - cooking oil
Lea & Perrins Worcestershire Sauce
Basil leaves chopped
Multi purpose Seasoning powder


Method:
1) Pour in worcestershire sauce to the sliced salmon.
2) Add in basil leaves, seasoning powder and olive oil to the fish. Make sure the saurce, basil leaves, seasoning powder and olive oil are mixed evenly to both side of the fish.
3) Cover up the fish and put it in the fridge for 20-30 minutes
4) Heat up the wok with the cooking oil.
5) Place in carefully the sliced salmon. For first timer, you might wanna try out with 2-3 slices. Pan fry it by flipping to both side of the fish. Once the colour turned to light pink, it is cooked.
5) Follow thru step 5 again for the remaining of the salmon.


Serves: 2 person Cooking time: 15 minutes

Chicken with Fermented Soy

Ingredients:
3 - chicken drumsticks (preferably chopped into 5 pieces per drumstick)
3 - tbsp oil
2 - cloves of garlic chopped
2 - tbsp fermented soy (tau cheong)
3 - cm of ginger chopped
1 - carrot cut into cubes
1 - onion cut into half
300 ml of water

Method:
  1. Mix well the chopped garlic, ginger and fermented soy. Set aside for 10 minutes.
  2. Heat up the wok. Pour in the oil and heat it up.
  3. Pour the mixed fermented soy in step 1 into the wok and stir fry it until fragrant. Add in the carrot and onion too.
  4. Add in the chicken and fry together well. Sprinkle some water to avoid wok stick and keep frying until the chicken, carrot and onion are mixing well with the fermented soy.
  5. Turn off the fire. Transfer all to a pot and turn on the fire to hit up the pot.
  6. Pour the water into the pot and mix well the chicken with water.
  7. Slow down the fire and stew the chicken for 15 minutes. Add in water and stir well if it evaporates.
  8. Turn off the fire once the chicken is cooked. (You can heat it up again whenever needed
Serves: 3-4 person Cooking Time: 30 minutes

Dark Soy Sauce Chicken with Chilli Padi

Ingredients:
3 - chicken drumsticks chopped into pieces. Preferably 5 pieces in one drumstick
2 tbsp - oil

Marinade 1:
3 - cut chilli padi (depending on the level of spiciness)
3 tbsp - light soy sauce

Marinade 2:
5 tbsp - light soy sauce
2 tbsp - dark soy sauce
1 tbsp - oyster sauce
1 tsp - sugar
pinch of pepper

Method:
1) Mix Marinade 1. Press the cut chilli padi in the light soy sauce to mix them well and leave it for a while.
2) Mix Marinade 2 well. Pour both Marinade 1 and 2 into the chicken and mix them well for 10 minutes
3) Hit up the wok. Once the wok is hot, pour in the oil. Stir fry the chicken well and add in some water to simmer the chicken. Cover the wok and waited for 20 seconds. Add in little bit of water if it dries up and stir again.
4) Serve the chicken once done.

Serves: 3-4 person Cooking time: 15 minutes
